The Extreme Demand of Solid Fuel Extraction
Commercial kitchens utilizing solid fuels (charcoal, mesquite, wood) generate an exhaust plume that is radically different from standard gas-fired equipment. The plume contains massive amounts of creosote, live sparks, and dense particulate smoke. Standard dry electrostatic scrubbers will rapidly foul and present a severe fire hazard. Wet scrubbers (Ecology Units) are the mandatory engineering solution.
Continuous Water-Wash and Creosote Mitigation
A wet kitchen scrubber forces the hot, grease-laden air through a continuous, high-pressure water spray manifold mixed with biodegradable surfactants. This violent scrubbing action atomizes the grease, extinguishes live embers, and continuously washes the internal baffles, preventing the dangerous accumulation of highly flammable creosote within the ductwork.
